Stuffed Crab
Ingredients:
  • 12 oz. cooked crab meat
  • 4 crab shells (you can use blue crab or
    any other crab shell you have cleaned
    and stored)
  • 1 1/2 cups toasted bread crumbs
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped parsley
  • 1 lemon quartered
  • 4 sprigs parsley
  • 1/4 to 1/3 cup butter
  • 3/4 tsp Zatarain's Creole Seasoning
In a medium sauce pan, cook onion, celery, green peppers, and green onions in butter over medium-high heat for
about 6 to 8 minutes. Remove from heat. Stir in crab meat, bread crumbs, parsley, and seasoning. Spoon into 4 large
crab shells. (note: grease the inside and it will come out easier). Bake at 375 for about 15 minutes or until top is
golden brown. Garnish with lemon wedge and parsley.

Makes 4 servings.
My son was never crazy about spicey
Cajun food, but the stuffed crab was a
dish he NEVER turned down (that and
lobster tails). Last year, we went to
Orange Beach, Alabama and caught
several dozen fresh blue crabs. We
cleaned them and made a gumbo. The
rest, we cleaned and brought home.
Later I made stuffed crabs! The condo
had everything we needed (fishing and
otherwise).
