Shrimp Creole
Ingredients:
    1 lb fresh or frozen peeled deveined shrimp
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/2 cup chopped celery
    3 cloves of garlic minced or pressed
    1/4 cup butter
    1-16 oz can diced tomatoes (do not drain)
    1/4 cup chopped parsley
    1/2 tsp Zatarain's Creole Seasoning
    1/2 tsp paprika
    1 bay leaf
    2 T cold water
    4 tsp cornstarch
    Pot of cooked rice
Sauté onions, green pepper, celery, and garlic in a 10 to 12 inch skillet (needs to be one with a lid). Add tomatoes,
parsley, Creole seasoning, paprika, and bay leaf. Bring to a boil. Reduce heat, cover, and simmer for about 15
minutes.

Combine cornstarch and cold water. Stir into mixture making sure not to clump. Add shrimp. Cook for about 2 or 3
minutes, stirring till thickens. Remove bay leaf. Spoon over hot cooked rice.
