Red Beans and Rice
Ingredients:
- 1 lb bag of dry red beans or kidney beans
(you can substitute pintos too)
- 6 cups water
- 1 lb pork ribs
- 1 lg onion chopped
- 1/4 cup chopped cilanto
- 3 cloves garlic minced or pressed
- 2 bay leaves
- 3/4 tsp ground red pepper
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion tails
- 1/2 tsp Zatarain's Creole seasoning
- Cooked rice
- Green onion tails
In a 4 qt pot, bring water to boil. Put in ribs and bay leaves, cover, and simmer on medium for 1 hour. You may have
to add more water and stir occasionally. Add remaining ingredients. Simmer for 1 hour or until beans are tender. Serve
over rice with onion tails.
Hint: If you can't stand over a stove all day and watch dinner. Put everything in the crock pot on low, go to work,
shopping, whatever, when you come home, dinner is waiting!
Makes 8 servings.
