Pecan Pie
Ingredients:
- 1 pie shell
- 3 eggs slightly beaten
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup dark corn syrup
- 1/3 cup melted butter
(margarine just won't cut it)
- 1 1/2 cups coarsely or finely
chopped pecans
In a large mixing bowl, mix eggs, sugar, and vanilla. Stir in corn syrup and melted butter. Mix well. Add pecans.
Stir.
Pour into pie crust. Cover the pie with aluminum foil to prevent the edges from burning. Place on a cookie sheet to
prevent spills in the oven. Bake at 350 for 25 minutes. Remove aluminum foil. Bake another 20 minutes or until
done. Cool on wire rack. Serve alone or with vanilla icecream.
Makes 8 servings.
