Noodle Soup
Ingredients:
- 1-12 to 16 oz bag of large shell noodles
- 4 to 6 medium potatoes, peeled and cut
into chunks
- 1 or 2 cans stewed or whole tomatoes (I
use organically grown tomatoes from my
own garden)
- 4 to 6 cups water
- 3 stalks celery cut up into chunks
- 1 can Spam, cut into chunks
- 1 lg onion diced
- Sat and pepper to taste (my mother
used to use a lot of pepper in this)
- 1 pan cornbread
- 2 cups self-rising corn meal mix
- 1 egg, slightly beaten
- 1 T sugar (optional)
- 1 1/2 cups buttermilk
- Cornbread: Mix all ingredients
well. Pour into greased iron skillet.
Bake at 375 for 30 to 40 minutes.
In a 10 qt pot, bring water to boil. Add potatoes and noodles. Cook for 20 minutes. Stir occasionally to keep
from sticking to pot .Add stewed tomatoes (you can add more than one can if you prefer), celery, chopped
onion, and Spam. Add salt and pepper to taste. Cook for another 20 minutes. Serve with fresh buttermilk
cornbread.
Serves about 7 or 8 people.
