Maque Choux (corn)
Ingredients:
  • 8 lg ears of fresh corn (or 2 cans corn)
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 T butter
  • 1 lg tomato diced (skin it if you don't
    like the skin)
  • 1/4 tsp ground red pepper
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
With a very sharp knife, cut 2/3 of the way up on the corn cob, scrape the cob. Turn it around and finish the last
1/3 and scrape. Repeat until all the corn is cut from the cobs. If you are using can corn, open the cans. Drain the
liquid from one can.

In a 3 qt sauce pan on medium heat, sauté the onion and green pepper (about 5 minutes).

Stir in corn, tomato, and red pepper.  Reduce heat, cover, and simmer for about 20 minutesor until corn is tender.
Season to taste with salt and pepper.

Makes 6 servings.
My husband hates tomatoes or else I
would fix this all the time.
