King's Cake
Ingredients:
- 4 cup all-purpose flour
- 1 pkg active dry yeast
- 1/2 cup milk
- 1/3 cup sugar
- 1/4 cup butter
- 1/2 tsp salt
- 3 eggs
- 1/c diced candied citron (use any dry fruit
on other occasions)
- 1 pecan half (just 1! Not half a bag)
- 1 cup sifted powdered sugar
- 1/2 tsp vanilla
- milk
- Green, yellow, and blue colored sugar
(purple is pretty too)
Mix 1 1/2 cups flour and yeast in a large mixing bowl. Heat 1/2 cup milk, sugar, butter, (this would be a good time
to add any other spices, if you want), and salt in a saucepan . Stir constantly until butter is melted and mixed
thoroughly. Add flour and yeast mixture. Mix well. Add eggs. Beat with mixer on low speed for about 1/2 minute.
Scrape sides. Stir in citron. Stir as much of the remaining flour as you can with a long handled spoon.
Turn dough out onto a floured chopping block or counter. Knead in more flour to make dough stiff. Shape into a
ball. Place in a greased bowl, rotating once. Cover and let rise in warm area for about 2 hours. Turn out dough.
Knead, cover, let rest for about 10 minutes.
Push the pecan into the dough. Shape the dough into a 30-inch long roll. Join ends for form a ring. (You can use a
bunt cake pan) and place on a greased baking sheet. Cover and let rise for about 1 hour.
Bake for 25 to 30 minutes at 350. Cover with foil to keep from burning. Remove. Cool.
Beat powdered sugar, vanilla, and 2 T milk in small mixing bowl. Spoon over cooled cake. Sprinkle colored sugar in
about 2 inch rows alternating until complete.
Makes 12 servings.

Traditionally for
Mari Gra, but
great on any
ocassion.
King Cake is served on midnight of January 6. Whoever gets the
pecan, becomes king or queen for a week, and it's repeated again.
