Fish Creole
Ingredients:
- 1 lb fish fillets (whiting or your
favorite fish)
- 1 cup water
- 1 cup thinly sliced celery
- 1/2 cup chopped onion
- 1 cup chopped green pepper
- 2 T butter
- 4 cloves garlic minced or pressed
- 1 can tomato soup
- 1 pkg onion soup mix
- Cooked rice
Sauté butter, green peppers, onion, and celery in iron skillet, about 3 to 5 minutes.
Stir in tomato soup, water, garlic, and onion soup mix. Stir until blended. Add fish
fillets. Bring to boil. Reduce heat, cover, and simmer for about 10 minutes. Serve
over cooked rice.
Makes 4 servings.
