Eggplant Dressing
Ingredients:
  • 1 small eggplant
  • 1/4 lb pork sausage (not the
    prepackaged kind)
  • 1 lg onion chopped
  • 1 cup fine dry bread crumbs
  • 1 egg slightly beaten
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
Clean the eggplant. Cut the end off and peel. Dice into 1/2 inch cubes. Boil the diced eggplant in a medium saucepan
for about 5 minutes. Drain and set aside.

Cook the sausage in a large skillet until brown. Remove from heat. Drain any grease. Stir in eggplant, bread crumbs,
egg, salt, milk, and pepper. Turn into a greased 1 qt casserole dish. Bake at 350 for 30 minutes.

Serves about 8 people.
