Dirty Rice (Pork Rice Dressing)
Ingredients:
- 1 1/2 cups cooked rice (use rice pot)
- 4 oz ground chicken livers
- 4 oz ground chicken gizzards
- 4 oz ground pork
- 4 oz ground pork heart or kidney
(optional)
- 3/4 cup chicken broth or stock
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green pepper
- 1/4 cup finely chopped celery (heart)
- 2 to 3 cloves garlic minced or pressed
- 1/2 tsp salt
- 1/2 tsp ground red pepper
- 1/2 tsp ground black pepper
You can purchase ground chicken or pork or put it through a meat grinder.
In a 2 or 4 qt sauce pan, cook ground pork for about 5 minutes. Add ground liver and gizzards (and heart or
kidney) and simmer for another 5 minutes or until the meat is no longer pink. Stir in broth (stock), onion,
green peppers, celery, salt, garlic, red and black pepper. Bring to boil. Reduce heat, cover, simmer for 10 to 15
minutes. Remove from stove. Add to cooked rice and mix well.
Makes about 8 servings.

Don’t worry, we didn't drop it in
the floor. Dirty rice gets it's
name from the chicken livers
and gizzards that give the rice
a dirty look. You can substitute
other meats for the livers and
gizzards, and it will still taste
good, but if you're into real
Cajun or Creole cooking, it
won't be the same!
