Candied Yams
Ingredients:
  • 6 to 8 medium Louisiana yams or
    sweet potatoes (2 lbs)
  • 1/2 cup butter
  • 1 cup orange juice (fresh or from
    concentrate)
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/4 raisins or dried cranberries
  • 1/4 cup water
  • 2 slices orange (thinly sliced)
  • 2 slices lemon (thinly sliced)
  • 1/2 tsp ground cinnamon (mmmm
    cloves)
  • 1/4 tsp ground nutmeg (try
    Jamaican nutmeg)
Thoroughly scrub yams and peel. Cut of
ends and roots. Cut into 2 inch chunks.
Melt butter in 4 qt Dutch oven over
medium heat. Stir in orange juice, raisins,
sugar, water, brown sugar, cinnamon,
nutmeg, and orange and lemon slices. Add
yams. Bring to a boil over high heat.
Reduce to low, cover, and simmer for 15 to
20 minutes (or longer if needed). Uncover
and simmer for another 15 minutes or until
glazed, stirring occasionally.

Makes 6 to 8 servings
