BBQ Duck or Goose
Ingredients:
  • 2 whole large ducks or goose
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1 tsp. Cajun Seasoning
  • 4 tsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1 tsp. tomato catsup or sauce
  • 1 tbsp. butter
  • 1 cup chicken broth
Hint: Before you begin, most people
find duck or goose to be a bit greasy.
If you use a drain pan it will help
eliminate the duck or goose from
soaking up some of the fat that drips
out. Or you can use the juice to baste
the duck.

You can cut the duck or goose up like
chicken or bake it whole like chicken,
what ever your personal preference.
Mix half the spices and rub on the duck
or goose. Place in a broiler with a lid.
In the oven, at 450, brown under
broiler, then cover. Then baste
frequently with sauce made of
remaining ingredients. Sprinkle on salt
and paprika before serving.
