When you think of Louisiana you think of
crawfish, boudin, and Mardi Gras. So do I.
Raised in the heart of Cajun and Acadiana
Country (New Iberia, Louisiana), I learned
to cook Cajun food from the best, my
mother (Sylvia Matson)and grandmother
(Lucille Romero). Mother added her own
little twist to her dishes, like her dirty rice.
That was mouth-watering but her fresh
baked from scratch bread can't be beat!

When I was a kid, there was always some
sort of celebration going on in Louisiana. If
you've ever been to the Mardi Gras (fat
Tuesday), then you know what a Fais-Do-
Do is. For those of you who don't, the fais-
do-do was a cultural dance that still
survives in Acadiana country (Lafayette,
New Iberia, Breau Bridge, Delcambre,
Abbeville, etc.) as an attraction at festivals
and public parks.  Cajun restaurants that
feature live music feature the fais do-do.
Cajun music and the fais-do-do are
popular world wide. My brother and I used
to go to Mulate’s in Breaux Bridge and
party the night away (don't worry, I was
the designated driver). That was in the
80's. Click on the YouTube below and you'll
see not much has changed. Pan Gays is a
spot for the older crowd, I used to go with
my grandfather.
